The world would be pretty boring if it was entirely black and white. Although it might make us feel that we were in Sin City, and that would be pretty cool.
But really, colour is generally more interesting (particularly when watching snooker) and, it turns out, extremely important in branding and business; perhaps moreso that one would think.
