British people have ruined spaghetti bolognese says top Italian chef Antonio Carluccio

The Italian chef and restauranteur, Antonio Carluccio, has launched a scathing attack on the Brits - accusing them of ruining the sacred Italian dish of spaghetti bolognese thanks to an unhealthy obsession with seasoning.

The founder of restaurant chain Carluccio’s, a native of Salerno in South-West Italy, says that the much loved dish has been overcomplicated by an unnecessary use of herbs which, he says, shouldn’t be present in the recipe at all.

Speaking at the Cheltenham Literature Festival, the chef explained “When you think Italy, you start to put oregano, basil, parsley, garlic, which is not at all right,"

According to Mr Carluccio the recipe for perfect, authentic, bolognese is remarkably simple, in fact the dish needs just seven ingredients. . . “You should do this: oil, onion, two types of meat – beef and pork – and you practically brown this, then you put the tomatoes, then a bit of wine, including tomato paste, and then you cook it for three hours.

“That is it. Nothing else. Grate parmesan on the top and Bob’s your uncle.”

If there's anyone we trust on these matters it is a native of the home of bolognese. Everyone hates parsley anyway.
